Directions

1. To make the creamy garlic pinach chicken meal-prep: Steam the zucchini noodles in the microwave in a large bowl, covered, with 1/2 cup of water for 3 or 4 minutes. Drain and set aside. You can skip this step is you prefer keeping your zucchini noodles raw or cooking them in the creamy sauce.

2. Heat the oil in a large skillet over medium heat. Season the chicken cutlets on both sides with salt and pepper, and sear in the hot pan, for 5 minutes on each side, or until cooked through. Once chicken breasts are cooked, remove from the pan and set aside.

3. In the same pan, melt the butter in the remaining cooking juices. Add in the garlic and fry until fragrant (about one minute). Add onion and stir fry until translucent. Add the sun-dried tomatoes and fry for 1-2 minutes so they release their flavors. Finally, pour in the chicken broth, and allow the sauce to reduce down slightly. 

4. Reduce heat to low, add the heavy cream, and bring to a gentle simmer, while stirring occasionally. Season the cream sauce with salt and pepper to your taste.

5. Add in the baby spinach and allow to wilt in the sauce, and add in the parmesan cheese. Allow cream sauce to simmer for a further minute until cheese melts through.

6. Add the pan-seared chicken breasts back into the pan; sprinkle with the parsley, and spoon the sauce over each chicken cutlet. If you’d like to cook your zucchini noodles in the sauce, push chicken aside in the pan and toss the spiralized zucchini into the sauce and cook for two minutes, stirring regularly. Divide the cooked zucchini noodles into your meal prep containers and top with the chicken. Reheat the spinach chicken meal prep in the microwave when you’re ready to eat. Enjoy!

  • The key for a creamy sauce is to gently simmer the sauce to avoid separating.
  • Feel free to substitute chicken broth with vegetable broth or water.
  • We slice the chicken breasts into cutlets so they cook quicker. Alternatively, you can pound the chicken breasts to flatten and get an even thickness.

How to cook chicken for meal prepping

  • Use either skin-on or skinless chicken breasts. We like skinless because it has less fat, and we can cut the chicken breasts into thinner cutlets.
  • To allow the chicken to crisp up evenly while cooking, yet staying juicy, bring the chicken cutlets at room temperature and pat dry with paper towels. This also helps to prevent sticking in the pan.
  • Season chicken just before cooking to avoid drawing out the moisture and end up with dry chicken meat. 
  • Make sure your pan is nice and hot before adding the chicken in. If you use chicken breasts that are extra-thick, cook a little longer, reducing the heat to medium or medium-low, so you don’t burn the outside while the inside is still undercooked.
